Avgotaraho is Greece’s answer to caviar. It’s a product of high nutritional value, mighty taste and extremely long aftertaste. The more velvety texture it has, the more nutritionally rich it is.

A Taste with… History. Avgotaraho has been considered a delicacy since the era of the Pharaohs and it was an important element in the Ancient Greek diet. Its value was also known in Byzantine times, while nowadays it occupies a prominent place among gourmet products.

Avgotaraho is produced from mullet caught in Greek lagoons, preferably after mid-August. It has a characteristic spicy flavor that can be attributed to the flora and fauna of the sea lake. Once the fish is caught, the whole, mature ovaries are removed from the fish, washed with water, salted with natural sea salt, put to casts and are then air-dried under controlled conditions.

One important difference that distinguishes Greek Avgotaraho from its “cousins” is that the mullet roe is sealed in approximately eight layers of melted beeswax.The beeswax provides a natural way of shielding the product from oxidation while allowing it to keep its humidity. The beeswax also helps preserve the nutritive qualities of the ingredients of the roe.

It is rich in vitamins A, B, C and calcium. It constitutes a rich source of omega-3 fatty acids, which reinforce body health by acting positively on the cardiovascular system and by strengthening the immune system.

Holding a significant role in the diet of ancient Greeks and during the Byzantine Empire, it became part of Greek culinary heritage. It is considered Greece’s caviar and Lord Byron spread Messolonghi Bottarga throughout Europe.

For the novice, avgotaraho appears quite unique, odourless, and may look like a flat waxed sausage. But once the wax is removed, your taste buds will discover one of the most flavorful marine products.

Avgotaracho Messolonghiou, made from fish caught in the Messolonghi-Etoliko Lagoons is a European and Greek protected designation of origin, one of the few seafood products with a PDO.

Greece is among the ten first countries in the world in cheese production. There is a great number of different kinds of cheese in Greece, as the geographical configuration of the land with the big mountain volumes and the numerous islands allowed the formation of a very big variety of different and important kinds of cheese. Greek traditions often refer to milk and its products. From antiquity milk was considered as a somewhat sacred food, because Zeus, leader of the Olympic gods, was brought up with the milk of nymph Amalthea, while according to Greek Mythology the art of cheese making was a gift to the mortals directly from the Olympians.

‘Feta’ is the leading cheese, produced for at least six thousand years now! It is a soft, white cheese, matured and conserved in brine. Both types of cheese, soft and hard, are produced in Greece, while there are up to 545 different kinds of cheese recorded and 250,000 families nationwide who are occupied, fully or partially, with goat and sheep breeding, as goat and sheep milk represents almost 85% of the whole production.

Cheese can be categorised as follows:

-Based on the origin, i.e. the quality and diversity of the flora of each area of production, the cheese-making tradition of the site, the breeds of dairy animals in the region, the climatic conditions at each location.

-Based on the type of milk, i.e. sheep, cow, goat, buffalo, a mixture of two or more kinds of milk, in various proportions. Each type of milk has a special flavor and aroma, but has a different ratio in solids and fat it contains, so the type of milk plays an important role in the quantity required to produce a given amount of cheese. At the same time is also key to the colour and texture of the finished product and the behaviour of each cheese during maturation.

-Based on organoleptic characteristics: spreadable cheese, soft, semi-hard, hard, unsalted, salty, oily, moist, spicy, strong-smelling, easy or difficult to melt. These features are usually taken into account in the selection of each cheese with respect to its future use mainly for cooking and serving

Cheese is the richest food source of protein, especially hard cheeses, in which the protein content (30%) is greater than that of meat (20%). For this reason, cheeses have a high biological value and are suitable mainly for feeding children, who have greater need for amino acids than adults.

The traditional Greek sweets are classified into several categories. Wide range of sweets with olive oil such us crust sweets stuffed with dried fruits (eg baklava) or crust sweets filled with cream of semolina and flavoured with sugar syrup or honey among the most common traditional Greek sweets.

Another important category of traditional Greek sweets are the unique ‘spoon sweets’. The truffle is a hypogean fungus which grows underground, closely linked to certain kinds of plants, from which it absorbs nutrition by means of an extensive and ramified root system.

The fruit is in the form of a tuber and consists of a fleshy mass, whose colour varies from white to grey tending towards brown, depending on the plant on which it lives and grows. Indeed, the truffle consists of a percentage of water and mineral salts, which it absorbs from the surrounding soil.

Its form, usually round, depends on the nature of the soil: if the soil is soft it will be smoother; if the soil is compact it will have more difficulty growing and will therefore tend to be more protuberant and lumpy.

Truffles continue to be somewhat of a mystery even after more than 3000 years of consumption . The ancient Greeks loved them and they were prized by the Romans. Theophrasus, a disciple of Plato and Aristotle wrote about them as did Pliny, the scribe who documented the destruction of Pompeii.

Alexander Dumas in his Grand Dictionnaire de Cuisine wrote, “The most learned of men have been questioned as to the nature of this tuber and, after two thousand years of argument and discussion, their answer is the same as it was on the first day: we do not know. The truffles themselves have been interrogated and have answered simply: eat us and praise the Lord”

Palm Oil

Palm oil is extracted from two types of oil palm fruit: Elaeis guineensis, which is common in African regions, and Elaeis oleifera, whichis found in South America.

Historical accounts suggest that palm oil was a part of the diet of indigenous populations. At present, it has become the second most traded oil crop in the world, after soy, with Malaysia and Indonesia as its main producers.

Palm oil — also known as red palm oil — contains high amounts of saturated fat, vitamins, and antioxidants. If you see palm oil that’s colourless (also known as white palm oil), it means that it has been processed. The lack of colour means it has been stripped off most of its nutritional properties.

Rapeseed Oil

Rapeseed oil comes from oil seed rape, a root vegetable and cousin of mustard cabbage. The name is derived from the Old English term for turnip rapum. And yes, it comes from those yellow fields you can see in late spring.The oil has delicious earthy, nutty taste – it is suitable in dressings, stir fry, roasting, dunking.

Compared to olive oil it has half of the saturated fat and a much higher natural omega 3 content, the one in our diet that is often lacking.
